I hope they make a full Death Battle of this, and have it fully animated like Lex vs Ironman, or Goku vs Superman 1&2.

It depends on where in the FFVII timeline we're talking about. But here is Sephiroth at arguably his weakest.
Compare that to Vergil and we'd have an interesting match.
