DMC1 has aged better as a 3D Metroidvania game than anything else. The emphasis is on exploration and survival than performing extravagant combos. On the other hand, DMC3 has just aged horribly...not just as a hack-n-slash, but as a game period.
Yeah I too think that DMC1 is the one that aged the most of them... the levels are still beautiful to see imo, but it's boring to navigate them, you cannot switch weapons real time and the animations, you can clearly tell they're from early PS2 days.
Like many games from the PS2 era, it's a product of its time. A lot of games like Resident Evil, Onimusha, or any of the older Tomb Raiders can be jarring for newer players used to modern game mechanics.
Like Wolf said, it's a product of its time but what it does, it does well. I'm use to older game mechanics and think it still performs efficiently as a video game.
I dunno, I could tolerate the wonky camera and stiff controls in the first game because the combat didn't ask much from you. DMC3 tried to be a legitimate and deep H&S game like Ninja Gaiden, and gave depth and nuance to its enemies and weapons...all of which collapsed under the failure of the stiff controls and arthritic camera. You don't take 2001-era camera and controls and fling them into a 2005-era game.
