You're absolutely right. Mallet Island kind of self destructed upon itself in Devil May Cry 1, when Mundus was defeated. However, since Mundus' return in my Devil May Cry 5 FanFic, Mallet Island has resurrected itself. Having resurfaced from the watery grave, it has also undergone a huge redesign. Having altered itself heavily from its original form.
