Like Sparda had been, what if Eva had been an angel badass? I'm pretty sure that she would have know how to fight, since the demon and the angel had been in an incredibly long war. And Osiris did come from Eva's painting, which I'm sure belonged to her. I doubt Sparda would ever use an Angelic weapon. I'm sure her and Sparda had an epic battle against the demon that stormed their estate, or at least until Mundus had arived.
But what do you guys think? It would have been cool if she stalled Mundus so Sparda could have escaped with the kids.
She did stall Mundus in a way. It's implied from the dialogue when Dante was in the house that she had demons following her which she could have been trying to lead away so that Sparda had time to take the boys and make sure they were safe.
There's also extra dialogue that was not used in the game with Eva being interrogated and she's refusing to give information about where Sparda and the boys are. Then judging by how she cries out, they're hurting her to try and get the information.
Also, it is implied that Mundus took them by surprise at night. They had no time to mount a decent defence so the main priority of Sparda and Eva was stalling for time so that they could make sure the boys were not going to be harmed. It seems like Eva deliberately sacrificed her life and let Mundus tear out her heart to give Sparda the time needed to escape with the boys.
Given the options, it was the only theing that could be done. If both Sparda and Eva had fought back, then it would have put the twins in danger. It had to be that one of them stalled for time by sacrificing themselves.
As for Eva being badass. It is pretty badass to face demons and know that you're going to die trying to save your family. She knew that she couldn't hold her own against Mundus if Sparda was going to escape with the boys. Plus she had to feel Mundus ripping her open and tearing out her heart. She knew that was going to happen, but she still did it for her family. That's badass too.
