It worked for me. Change
GoldOrbMaxInInventory = 3
to
GoldOrbMaxInInventory = 99
Or any other number. I have trouble getting triple digits to work, but doubles always seem to work for me..

Do you know what I would change if I wanted to get more of the health and devil trigger crosses? Would it increase my bar further?

I think the crosses are below the orbs, I know you can edit the max/price but I never tried in game.
