I'm thinking that Vergil, assuming he is the leader of The Order, is only using Dante to take out Mundus. Once Dante takes care of Mundus, Vergil is going to swoop in an usurp whatever power Mundus had / was after.

Then Dante will take over as leader of The Order and maybe renames it to "Devil May Cry." Instead of operating as a gun-for-hire, Dante continues hunting demons with the leftover members of The Order.

Well, for the main question, no, I think they'll change the shop into something that can have a spray paint logo in the front that's more hip and appealing to the youth it targets. So your theory might be sound.

As for Vergil, no, I don't think he's in it for the double crossing, I think in the end Mudus is going to make it so Vergil falls.

It will be a club called DmC with bright lights, dancing topless strippers with fake devil and angel wings on poles and cages, a full bar and staff, loud music, big screens, slutty girls, ocational live band, a dude in the bathroom that watches you pee and hands you towels to dry, tall cielling, sprinclers, a camera crew from Girls Gone Wild, two live DJs, a babysitying service room, caged animals, and exept for the dude in the batroom an all female staff (Dude'll be in the women's batroom). The logo out front will just be a giant spray painted DmC logo and the line will go on till the end of the block and the bouncers will be big and scarry. Dante will sit in the VIP room where he screws the staff (including batroom dude and bouncers) and listens to people's problems to determine if he will help them or not.

I believe the shop will be in the game. In a manner that it affects gameplay.

Like a place to go to switch weapons, add items, train, etc. Like a safehouse. There being multiple ways for Dante to get to the safehouse, maybe a tunnel underground could take him there. Like a sewer lid you open which then leads into a quick cutscene of Dante jumping out in front of Devil May Cry.
