I think if you wanted to do a Off the record style with Dante instead of Nero you would have to change it up a lot since Dante doesn't really have a connection to Fortuna and after 1 he became very static/passive.
Granted that was more of a writer problem than a character problem but a way around that would be to have Dante and Vergil spent their formative years in Fortuna as thats where they went after their mother died.
I got the idea out of comments that people thought nero was a younger dante when he first appeared etc but neither DMC3 or the manga went in depth on Dante or Vergil's past so anything could have happened. You got the sense that you were stepping into an ongoing conflict so showing how this conflict was started in their formative years in Fortune seemed like a good place to start.
Its not purely a prequel since Dante does return to Fortuna after the events of 3 to defend it from a trio of demons under mundus's orders to wipe out the last vestige of Sparda. He didnt really know about Dante's survival and Dante defeating the trio is what gets him on Mundus's radar leading to the events of 1.
So its an interquel where you switch between Dante's return to Fortuna when he is about 26 to when he and vergil decides to leave when they are about 18.
